THE WINE
The Ribolla Gialla by Damijan Podversic is made from pure grapes of the same name, from vineyards located on Monte Calvario. It is unanimously considered one of the greatest Italian white wines. Organic farming, skin maceration and full ripeness of the grapes, spontaneous fermentation in oak vats and skin maceration of about 60-90 days. It ages for 36 months in barrels and then for 12 months in the bottle. Bright amber color, very wide and complex bouquet, notes of ripe peach, hazelnut, aromatic herbs and citrus peel. Powerful taste. Exceptional.
THE COMPANY
At just forty years old, Damijan Podversic already boasts incredible experience. He began at a young age to take care of the few family vineyards, learning everything he could about wine from his only teacher: Josko Gravner. Assisting him in the complex management of the winery-home is his wife Elena, who for years has been an absolute point of reference for Damijan. The most important vineyards of the winery, in addition to small plots scattered in Collio, are located on the wooded south-facing slopes of Monte Calvario, at the gates of Gorizia, in an unspoiled environment that is perfect for growing healthy and flavorful grapes.
The viticulture practiced is strictly organic, absolutely attentive to the balance and health of the plants. Damijan has been skilled in creating absolutely unique wines, avoiding the use of modern and standardizing aging practices, instead preferring the use of natural winemaking techniques learned from his teacher Josko. His white wines are both fermented on the skins with natural yeasts and are never put on the market unless they are absolutely ready to be tasted.
All this attention to the various winemaking processes makes Podversic's winery surprising, capable of giving us wines of great depth, rich in the flavors and aromas of Collio.
