Assyrtiko
Assyrtiko is a Greek white grape variety, originally from the island of Santorini. Assyrtiko is still grown in the arid soil rich in volcanic ash of Santorini, but also in other Aegean islands, such as Paros. It is grown in many regions of Greece and is also found in Macedonia and the Halkidiki peninsula. The winemakers of Santorini have adapted to the extreme conditions of the volcanic island, growing their vines in "baskets", wrapping around the plants, providing them shelter from strong winds and increasing the distances between the vines to make up for the lack of water in the soil. . Assyrtiko wines are produced in a multitude of types, from fresh, fruity and mineral white wines, sometimes even fermented in wood, to dessert wines.
