'Olmèra' by De Stefani is produced at the Le Ronche estate in Fossalta di Piave, where the old vineyards of over 30 years of Friulano and Sauvignon are located, where once there was an elm forest. A blend of 60% Friulano and 40% Sauvignon, this wine has a strong personality in which the Friulano, dried for 1 month with the development of noble rot on the grapes and then fermented in barrique, provides body, complexity, and structure. The Sauvignon is not dried, but fermented in steel, giving freshness and aromaticity. Elegant and unique with a rich bouquet, featuring intense aromas of ripe fruit. Full-bodied, harmonious, velvety taste, very persistent, with a hint of exotic fruit. An ideal wine with risottos, shellfish, and seafood.

THE COMPANY

Attention to the environment and winemaking tradition form the foundation of the De Stefani winery in Fossalta di Piave, winegrowers for four generations, in the heart of Veneto. The farm is located in the center of a hilly area where making wine is not just history but also art. And if there is a winery where the word "sustainability" has real value, it is De Stefani: all the vineyards are located within the Podere Colvendrame, three hundred meters above sea level, in the area of production for the controlled designation of origin wines "Colli di Conegliano" and "Prosecco di Conegliano e Valdobbiadene." Sustainability, thus, in the most significant interpretation of "environmental respect": De Stefani has abolished pesticides, herbicides, chemical fertilizers, and insecticides, and the winemaking processes are carried out without the use of sulfites or added preservatives. The company is also fully energy self-sufficient, producing its own electricity through solar panels. Knowledge, tradition, and love for the environment: the three essential ingredients for wineries of the future, in a company of the present.
