Hungary is one of the European countries that has gone, in the last hundred years, from one of the most important wine producers in Europe with Tokaji, to a very limited production of dry wines, mainly white, both with native and international grapes . The first productions date back to the Roman Empire. But it was the Magyar tribes who developed vine cultivation at the end of the 9th century. Only in the 17th century did Tokaji Aszú gain the fame and prestige it has today. At the end of the 17th century, the "noble rot" (Botrytis Cinerea) and its effects on wine production were identified and therefore specific rules were developed for the production of Tokaji Aszú.
