The winemaking style is typical of Collio, with white wines produced using skin maceration and absolute respect for the territory, avoiding the use of any chemical or synthetic substances. Aged for 36 months in barrels and 12 months of resting in the bottle. Bouquet of great complexity and definition with notes of peach, acacia honey, white flowers, and toasted almonds. Full, creamy, and opulent taste. Excellent.

THE COMPANY
At only forty years old, Damijan Podversic can already boast incredible experience. He started young, taking care of the few family vineyards, learning everything that could be learned about wine from his only teacher: Josko Gravner. Assisting him in the complex management of the winery-home is his wife Elena, who has been an absolute point of reference for Damijan for years. The most important vineyards of the winery, in addition to the small plots scattered throughout Collio, are located on the wooded slopes facing south of Monte Calvario, on the outskirts of Gorizia, in an unspoiled environment that is perfect for growing healthy and flavorful grapes.
The viticulture practiced is strictly organic, absolutely attentive to the balance and health of the plants. Damijan has been skilled in creating absolutely unique wines, avoiding the use of modern and standardized aging practices, preferring instead the use of natural winemaking techniques learned from his mentor Josko. His white wines are both fermented on the skins with natural yeasts and are never put on the market unless they are absolutely ready to be tasted.
All these attentions to the various winemaking processes make the Podversic winery remarkable, capable of giving us wines of great depth, rich in the flavors and aromas of Collio.
