THE WINE
The Premier Cru Beaune 'Clos des Mouches' by Domaine Chanson is a wine of great pleasure, made from pure Chardonnay grapes that grow in a stony soil composed of limestone, clay, and silica. The vineyard is four and a half hectares wide, located in a hilly area that receives plenty of sunlight. The aging process lasts for about a year or slightly more in oak barrels, in the beautiful cellar from the fifteenth century. This wine is ideal for pairing with seafood dishes or white meats.
THE COMPANY
During the reign of Louis XV, around 1750, Simon Verry founded the winery now known as Domaine Chanson Père et Fils, one of the first wine-growing establishments in Burgundy to initiate wine commerce, which began in Beaune during the 18th century. More than two centuries later, the Maison currently has a vineyard property of about seventy hectares, spread across the best areas classified as “premier cru”, both in Beaune and in Savigny and Pernand Vergelesses.
Since 1999, the Chanson company has belonged to the Bollinger Champagne group, which, following a policy aimed primarily at achieving the highest quality in each wine, employs a large team of experts capable of truly maximizing the potential of the best terroirs in Burgundy and the grapes from those areas. Among the vines, there is always a constant and utmost respect for the balance of the environment, nature, and ecosystem, and the agronomic standards followed dedicate meticulous and careful attention to each plant, ensuring that the grapes harvested are precious, genuine, and concentrated in every nuance. In the cellar, by scrupulously controlling every production step, the main objective, aimed at enhancing everything that the season and the territory have been able to express in the fruit, is never lost sight of.
