The 'Vigna Gatinera' by Fontanafredda is produced following the rules of the Classic Method scrupulously, and rests for at least 60 months on the lees. 'Cuvée Aurora Reserve 100 Months' is an expression of the continuous and inexhaustible pursuit of excellence, even in its Piedmontese soul, of the Banfi company which has believed in the Alta Langa project since the early 1990s. An interpretation of the Classic Method of Piedmont "par excellence and excellence". The cuvée is made up of Pinot Nero (85%) and Chardonnay (15%) hand-picked and coming exclusively from vineyards grown in the high hills of Piedmont. Fermentation and aging in bottle on the lees for at least 100 months. Intense aroma and initially characterized by hints of candied citrus peel which then evolve into aromas of brioches, dried fruit and vanilla. Austere and elegant wine, which stands out for its marked sapidity and remarkable persistence.
Alta Langa Extra Brut 'Parcellaire' Millesimato by Enrico Serafino has the particularity of a parcel vinification since the birth of the Alta Langa docg. It is obtained from the selection of some parcels that best represent the typically 'scratchy' character of the denomination. The dosage, deliberately reduced in sugars, combined with the absence of distillates, eliminates any interference between the wine and its territory of origin. The refinement of 42 months on the lees takes place until the wine is completely ripe. The liqueur d'expédition added after disgorgement is prepared following a secret recipe that includes reserve wines and sugar (4.5 g / L). Complex, vertical with citrus scents, vibrant and elegant, with a rich structure and a long pleasant aftertaste.
Alta Langa Reserve 'Zero' Late Disgorged is the sparkling wine that best represents Enrico Serafino Alta Langa. The complexity of the terroir is fully expressed thanks to the meticulous execution of each passage from the vine to the wine. Produced starting from the 2004 vintage, it is the first Alta Langa Pas Dosé ever produced. The choice of avoiding any dosage combined with late disgorgement allows Zero Riserva Pas Dosé to affirm its evident singularity. Aging on the lees for at least 72 months and late disgorgement, no liqueur d'expédition. Complex, multifaceted, full-bodied, elegant and intense, with a vibrant structure and a very long mineral aftertaste.
