Mosel Scharzhofberger Riesling Kabinett by Egon Müller is made in a vineyard of the same name, one of the most famous in Germany, probably originally planted by the Romans. Located in Wiltingen, away from the Saar in a south-facing side valley, its slopes are quite steep, with a gradient of 30–60%, and steep, at 180-280 meters above sea level. The Spatlese type corresponds to a late harvest of about 1 week, which allows the grapes to concentrate aromas and sugars while maintaining the freshness of the vine. Dense with aromas, persistent and long, it has an excellent potential for evolution and aging. It ages in steel for a few months before bottling. Riesling Spatlese 'Graacher Himmelreich' by Prum is a sweet white wine. Extroverted, lively and rich in fruit, it comes from the Graacher Himmelreich vineyard from vines over 40 years old. The Spatlese type corresponds to a late harvest, with a high degree of ripeness of the grapes, due to the Botrytis Cinerea. In the cellar the intervention is minimal: vinification and aging in steel.
