La Scolca Gavi dei Gavi DOCG Riserva ‘D’Antan’ 2007 is an author's white wine, created only in exceptional vintages. It comes from the famous cuvée Black Label, but taken further: the must ferments and matures for up to 10 years in steel, on native yeasts, without filtration or stabilization, following a philosophy of slow natural evolution. The result is a surprising wine for longevity and depth, with intense aromas of candied citrus, tropical fruit, chestnut honey, marine notes and flint, complemented by hints of toasted almond and walnut. On the palate, it is tense, elegant and creamy, with a mineral texture and extraordinary persistence. A rare masterpiece, to be rediscovered after decanting, perfect with important shellfish, aged cheeses, or as a meditation wine. The maximum expression of Cortese according to the vision of the Soldati family.

Color: light straw yellow with slight greenish reflections, a sign of evident freshness despite aging, thanks to the high clarity and static decantation of the product.

Bouquet: intense and deep, with mineral aromas, notes of flint and limestone, accompanied by hints of stone fruit (toasted almond, hazelnut) and citrus peel. The complexity evolves towards soft floral hints, while the olfactory finish remains persistent.
