After manual harvesting, the grapes undergo gentle pressing and brief decantation without the addition of sulfur dioxide. Fermentation takes place in steel with pied de cuve at a controlled temperature, followed by aging on the lees for 8 months, which gives it structure and elegance. On the nose, there are hints of bitter almond, white flowers, aromatic herbs, and citrus, while on the palate it stands out for its freshness, minerality, and long persistence.
