Alto Adige DOC Sauvignon Blanc “Pepi” 2023 from Cantina Tramin comes from two classic Sauvignon areas: Penonand Pinzon, in the municipalities of Cortaccia and Montagna, on opposite valley slopes. Vineyards receive sun at different times: west-facing in the morning, east-facing from afternoon to sunset, creating contrasts that enhance aromas and freshness. Hand-picked grapes undergo immediate gentle pressing, followed by steel fermentation at 19°C. Ageing: 6 months on lees in large oak barrels, no malolactic fermentation. Bright straw-yellow, it shows sage, elderflower, citrus, exotic fruit; on the palate mineral, fresh, persistent. Pairs with asparagus, fish, fresh cheeses.

Cantina Tramin is a historic wine cooperative in South Tyrol, founded in 1898 by Christian Schrott, parish priest of Termeno and pioneer in enhancing the local wine heritage. Today, it brings together about 160 families of winegrowers who cultivate a total of 270 hectares of vineyards located between 250 and 850 meters above sea level, in an area characterized by strong temperature variations, diverse soils, and a microclimate ideal for grape ripening.
The production philosophy of Cantina Tramin combines tradition and innovation: agricultural practices respect the environment and promote biodiversity, while in the winery, winemaking is carried out with artisanal care and cutting-edge technology to enhance the varietal character.
