Expression of strong territorial identity, the Greco ‘Pietralata’ by La Guardiense is born from 12 hectares of selected vineyards in the Sannio Beneventano, between 120 and 400 meters of altitude, on complex soils made up of marls, sands, and gravels. The vines have an average age of 10 years and benefit from a harvest between late September and early October. This is followed by a cryomaceration at 8-10°C and a soft pressing, before fermentation in steel at low temperature (12-15°C) for about 20 days. The malolactic fermentation not performed preserves acidity and freshness. The aging continues in the bottle until April. It appears intense straw yellow; on the nose, there are prominent mineral notes, peach, white pepper, and flint. On the palate, it is rich, dynamic, and enveloping, with a long and flavorful finish. Ideal with shellfish, seafood, grilled vegetables, and white meats.
