Fiano del Sannio DOP 'Colle di Tilio Janare' by La Guardiense is made from 100% Fiano grown on 7 hectares of vineyards in Sannio Beneventano, at 120–400 meters above sea level. Vines are 15 years old, trained using the Guyot system on sandy-gravelly and marl soils. Harvested in early September, the grapes undergo cryo-maceration at 8–10°C for 1–12 hours, followed by soft pressing and fermentation in steel at 12–15°C for about 20 days. Malolactic fermentation is not carried out to preserve freshness. The wine is bottle-aged until April. Bright straw yellow with green hues, it offers floral, mint, cedar, and thyme aromas. On the palate, it's creamy, enveloping, with a long, savory finish. Perfect with lightly sweet dishes like spaghetti with anchovies, baked fish with potatoes, or fish soups. A fine expression of a complex terroir, symbol of the Sannio Cru line.
