Fiano del Sannio DOP 'Colle di Tilio Janare' by La Guardiense is the result of 7 hectares of vineyards in Sannio Beneventano, between 120 and 400 m s.l.m., the 'Colle di Tilio' is a pure Fiano grown on sandy-gravelly and marly soils, with Guyot system and 15-year-old vines. The harvest takes place in early September, followed by cryomaceration at 8-10°C for 1-12 hours, gentle pressing, and fermentation in steel at low temperature for 20 days. No malolactic fermentation to preserve freshness. Aging in bottle until April. It presents itself as straw yellow with green reflections. On the nose, floral, menthol, cedar, and thyme notes emerge. The palate is creamy, enveloping, with a long and savory finish. Perfect with slightly sweet dishes, such as spaghetti with anchovies, baked fish on potatoes, and fish soups. It elegantly interprets a complex and cooperative terroir.
