Passito di Pantelleria DOC by Ferrandes is made from Zibibbo grapes grown in the traditional alberello pantesco method, protected from the wind in depressions carved into the soil. The vineyards are located in C.da Mueggen and Acque Dolci (1.6 ha, 350 m s.l.m.) on volcanic soils rich in minerals and silicates. The yield is 40 q.li/ha. The harvest is manual in crates, from mid-August to the end of September, with strict selection in the vineyard. The grapes, dried in the sun for 8-15 days on drying racks next to the lava stone walls, are vinified using traditional methods and fermented in small tanks inside a Spanish dammuso from the 1600s. The wine matures for 6 months in steel, developing intense notes of dried apricot, figs, honey, and candied citrus. Ideal with blue cheeses, dry pastries, dark chocolate, or on its own, for meditation.

Ferrandes
In the center of the Sicilian Channel, not far from the Tunisian coast, lies an authentic gem of the Mediterranean: Pantelleria. The largest of the smaller Sicilian islands, thanks to its volcanic soils, is renowned worldwide for its most representative wine, the Passito di Pantelleria. Its cultivation of alberello pantesco – included by UNESCO in 2014 among the oral and intangible heritage of humanity – tells the strength and character of the island.
In this paradise, in the Mueggen district, stands the ancient 17th-century dammuso of the Ferrandes family, which, with a handcrafted production of just 5,000 bottles a year, creates one of the most iconic sweet wines of Sicily. Salvatore Ferrandes, known as "Salvatureddu", and his wife Dominica, oversee every stage of the process with meticulous care, even going as far as sleeping in the cellar during the most delicate moments of winemaking. The vineyard, covering only 2.7 hectares, is entirely cultivated with Zibibbo, following natural criteria certified by the Consorzio Vini Veri.
The grapes, hand-harvested, are sun-dried for 8–15 days on lava stone racks and vinified in small tanks. After a six-month aging in steel, a complex and captivating wine is born, with hints of dried apricot, honey, and candied citrus. Color: deep amber with golden and copper reflections. The density in the glass suggests an important structure and a rich sugar concentration.
Bouquet: intensely aromatic and complex. Clear notes of dried apricot, dried figs, and candied orange peel emerge, intertwined with scents of honey, dates, caramel, and a slight hint of Mediterranean herbs. The olfactory evolution is broad and persistent, with nuances that recall the volcanic origin of the soil.
Taste: dense, enveloping, and harmonious. The sweetness is perfectly balanced by an acidic vein that provides freshness and liveliness. The finish is very long, with returns of dried fruit, citrus, and honey, leaving a warm and velvety sensation.
