Nes Passito Naturale di Pantelleria is a naturally sweet wine obtained from Zibibbo grapes cultivated in the traditional Pantelleria alberello system, a practice recognized as UNESCO Heritage, in the volcanic soils of the island. The best bunches are dried in the sun on trellises, naturally concentrating sugars and aromas. The harvest, between the second and third decade of September, is followed by soft pressing, slow fermentation with the addition of dried grapes, and aging for 10 months in steel. The result is an amber wine with ancient gold reflections, with an extraordinary aromatic richness, featuring notes of apricot, honey, dried fruit, citrus, and Mediterranean herbs. On the palate, it is soft, sweet, and fresh, with a rich and enveloping sip, and a long and persistent finish. Produced at Tenuta Sibà di Pellegrino, a symbol of an ethical pact with over 350 suppliers.
