Champagne AOC Extra Brut “Annexa” Waris Hubert comes from the Grand Cru of Aÿ, a prized terroir with chalky and clay-limestone soils enhancing the complexity of 100% Pinot Noir. After stainless steel vinification at controlled temperature, the wine ages over 5 years on the lees, gaining aromatic depth, creamy mousse and refined taste. Further bottle aging amplifies balance and persistence. The bouquet shows red fruits, citrus, toasted brioche and floral hints; the palate is structured yet silky, with vibrant acidity and a mineral, vinous finish. A dosage of 4.5 g/l gives it an elegant Extra Brut style, perfect with shellfish and haute cuisine dishes.

Waris Hubert

The Waris Hubert Maison was founded in Avize, in the heart of the Côte des Blancs, where deep chalk soils and terroir vocation give life to refined Chardonnay. Established in 1999 by Olivier Waris and Caroline Hubert, the estate combines family tradition with a modern vision, creating a style that highlights purityaromatic precision, and mineral elegance. The vineyards include Grand Cru and Premier Cru parcels in Avize, Chouilly, Oger, Cramant, and Ay, among the most prestigious areas for producing high-quality Champagne.

The production philosophy is clear: respect for nature, enhancing each parcel, and vinifications aimed at expressing the nuances of every cru. Fermentation takes place partly in stainless steel and partly in oak, with lees aging always exceeding 24 months, giving complexity and depth.
