Champagne Brut Grand Cru d'Aÿ by Gaston Chiquet is a vintage blanc de blancs of great elegance, born only from Chardonnay grapes of the Grand Cru di Ay from vines that have an average age of about 20-30 years. All the vines are vinified separately and the grapes are pressed with the use of 'champenois' presses, to gently extract only the free-run must. Very long maturation on the lees for 84 months, which allows the Chardonnay to reach an extraordinary complexity and expressive finesse. Mature and evolved bouquet, which expresses floral aromas, citrus aromas, yellow fruit, shades of bread crust and dried fruit. The sip is intense and satisfying, aromatically rich and persistent, with a finish on beautiful fresh and mineral notes. Champagne of excellence.

THE COMPANY
Gaston Chiquet is a récoltant-manipulant vigneron from Dizy, a small commune located in the Vallée de la Marne, in the heart of Champagne. Gaston founded the winery in 1935, after breaking away from the Chiquet Frères family business founded in 1919. Together with his son Claude, Gaston bought land in the prestigious crus of Ay and Hautvillers, thus expanding the family domain. Today Gaston Chiquet's vineyard covers 23 hectares and includes the three classic Champagne grape varieties: Chardonnay, Pinot Meunier and Pinot Noir, whose plants reach 27 years of age. The management of the winery is based on respect for the environment and biodiversity: for example, the grassing technique is used, pheromones are used as an alternative means to combat the vine moth and great attention is paid to the quality of phytosanitary treatments, in order to reduce the quantity of products used. In the cellar, champenoise presses are used, which allow a slow extraction of the juice without damaging the skin of the grapes: a fundamental precaution for obtaining a white wine from black grapes, while preserving the finesse of the aromas. The Champagnes produced in this way show a perfect balance between aromas, freshness, fruit and territorial expressions.

Fermentations take place separately for each single parcel. The base wines rest in wood for 3 months and after the creation of the final assembly, they are placed in a long aging of at least 48 months on the lees, giving life to a Champagne of great intensity and gustatory depth. Inimitable complexity and charm, supported by a clear and elegant mineral freshness.
