In the fascinating Mediterranean context of the island of Pantelleria, the Pantelleria Bianco DOC “Isesi” by Pellegrino is born, the result of a project started in the 1990s by the historical Marsala family in close collaboration with local grape growers. It is made from pure Zibibbo, grown as Pantesco bush vines in the districts of Sibà, Mueggen, Barone, and Khamma, on volcanic soils rich in iron at 300 m s.l.m. After manual harvesting in early September, the grapes are gently pressed and fermented in steel at low temperature, followed by aging on fine lees for 12 months. The aromatic profile is intense and original: capers, green apple, white peach, jasmine, and sage. On the palate, it is dry, savory, and persistent, with a perfect balance between freshness and softness. A white wine of strong identity, perfect with shellfish, couscous, and spicy dishes.
