Château Les Justices Sauternes is born in Preignac, in the heart of Sauternais, from vines cultivated with respect for the environment, on gravelly and clayey soils. Composed of 85% Sémillon, 10% Sauvignon Blanc, and 5% Muscadelle, it is hand-harvested in multiple passes to select only the bunches affected by botrytis cinerea. After a gentle pressing, the must ferments slowly at low temperature in steel and barrique, with partial aging in wood for 12 months, which enriches the wine with complexity and structure. On the nose, it releases dried apricot, honey, candied citrus, and saffron. On the palate, it is silky and harmonious, with sweetness balanced by vibrant freshness. In the beating heart of Sauternes, specifically in Preignac, the eight hectares of vineyards of Château Les Justices extend, a property passionately managed by Julie Médeville and Xavier Gonet. She, heir of the famous Médeville family – known in France as the “Antiquarians of Sauternes” – and he, a distinguished winemaker from Champagne, represent the soul of the Gonet-Médeville house.
Among vines that boast an average age of over 40 years, Sémillon (85%), Sauvignon Blanc (10%), and Muscadelle (5%) grapes are cultivated. Each grape is harvested by hand, only at the perfect stage of botrytis, the famous noble rot that makes Sauternes so unique. In the cellar, winemaking is carried out with almost artisanal care, followed by a two-year aging in oak barrels.
