Château Les Justices Sauternes is crafted in Preignac, Sauternais, from vineyards on gravelly-clay soils, farmed with respect for the environment. Made of 85% Sémillon, 10% Sauvignon Blanc, and 5% Muscadelle, grapes are hand-harvested in multiple passes (tries successives) to select bunches with botrytis cinerea. After gentle pressing, the must ferments slowly at low temperature in stainless steel and barrels, followed by 12 months of partial oak aging, enhancing depth and structure. The bouquet reveals dried apricot, honey, candied citrus and saffron. The palate is silky and balanced, with fresh acidity lifting the sweetness. Perfect with foie gras, blue cheeses and fruit desserts.

Château Les Justices
Right in the heart of Sauternes, in the charming commune of Preignac, lie the eight hectares of Château Les Justices, a domaine nurtured by the passion of Julie Médeville and Xavier Gonet. Julie, heir to the Médeville family – known in France as the “Antiquarians of Sauternes” – and Xavier, a skilled oenologist from Champagne, are the power couple behind the Gonet-Médeville label.
The estate’s vines, averaging over 40 years of age, are planted with Sémillon (85%), Sauvignon Blanc (10%) and Muscadelle (5%). Grapes are handpicked one by one, only when touched by noble rot, the precious botrytis cinerea. In the cellar, meticulous vinification is followed by a two-year aging in oak barrels.
The result is a sweet wine of exceptional depth and grace, with aromas of candied apricot, honey, and saffron, and a lingering finish that enchants the senses.
