The vines, with an average age of 35 years, are cultivated according to the principles of sustainable agriculture. The harvest is exclusively manual with a double selection of the bunches. After a gentle pressing, the must ferments at controlled temperature in stainless steel tanks to preserve the aromatic freshness. It is followed by several months of aging on fine lees to enrich the structure.
