The Trebbiano d’Abruzzo 'Fosso Cancelli' by Ciavolich is produced in the area of Loreto Aprutino using integrated farming from vines planted in 1974. Producing artisanal wines with historical and indigenous varieties is one of the reasons that led the winery to produce this Trebbiano. The grapes from the oldest vineyard of the estate are hand-harvested. Fermentation with indigenous yeasts takes place through the preparation of a 'pied de cuve', created by selecting the ripest grapes before their harvest. It is vinified and aged for 6 months on its own noble lees, partly in terracotta amphorae and partly in Slavonian oak barrels. Finally, it is blended with careful and 'tailored' attention to the various components. A wine with character and evident, sophisticated organoleptic tones, but never excessive, with a broad, composed, yet decisive taste.

Ciavolich

In the heart of the Abruzzo wine region, among sun-kissed hills and breezes descending from the Gran Sasso to meet the Adriatic Sea, lies the winery Ciavolich, a reality deeply connected to its history and territory. The origins of the family date back to the 16th century when the Ciavolich, wool merchants of Bulgarian origin, settled in Miglianico, beginning an agricultural tradition destined to last for centuries.
It was in 1853 that the first family winery was established, built to vinify the grapes grown on their owned lands. Today, this long legacy is in the hands of Chiara Ciavolich, who leads the company with passion, elegance, and a contemporary vision, renewing the commitment to authentic and quality viticulture every day.
The beating heart of the estate is now located in Contrada Salmacina, in Loreto Aprutino, in one of the most vocated areas of Abruzzo for vine cultivation. Here, at an altitude of 250 meters, the vineyards enjoy an ideal climate: mild, bright, constantly ventilated, and with marked temperature variations. The clay, loamy, and sandy soils provide perfect conditions for the maturation of healthy bunches, rich in aromas and structure.
Among the rows, the grape varieties symbolizing Abruzzo's identity are cultivated: the intense and vibrant Montepulciano, the fresh and harmonious Trebbiano, and the Pecorino, an ancient variety now rediscovered for its aromaticity and minerality. Each label tells the story of a generous land and a family that has preserved its soul for over 150 years.

THE COMPANY

Ciavolich is a family-run business that has cultivated vineyards in Abruzzo for several generations. The family's history is very old. Wool merchants of Bulgarian origin, the Ciavolich arrived in Italy during the 16th century and settled in the village of Miglianico. The first winery was established in 1853 to vinify grapes from their own land. Over the generations, the estate has expanded, especially in the wonderful area of Loreto Aprutino. Today the estate is managed by Chiara, who continues the family tradition with passion and expertise. The core of the company has moved to Loreto Aprutino, in Contrada Salmacina, in one of the most vocated areas of Abruzzo for viticulture, in a hilly area at 250 meters above sea level, just a few kilometers from the Gran Sasso massif and the Calderone glacier, as well as from the Adriatic coastline. The climate is mild and sunny, very bright and always breezy, with significant temperature fluctuations between day and night. The soils are clayey and loamy, with sandy presence, very suitable for high-quality viticulture. In these favorable conditions, the vines produce perfectly healthy clusters, with very rich and intense aromas. Among the rows, the historically present grape varieties in the area are cultivated, particularly Pecorino, Trebbiano, and Montepulciano.
