The Valdobbiadene Prosecco Superiore di Cartizze DOCG Dry “Primo Passo” Varaschin is born in the heart of Cartizze, at 290 m a.s.l., from 100% Glera grapes grown on sunny slopes and mineral-rich sandstone soils, known as “salis”, which provide sapidity and complexity. The double-arched cane training system ensures uniform ripening. Hand harvest from mid to late September, white vinification with gentle pressing and temperature-controlled fermentation. Produced using the Martinotti Method, with 6 months in autoclave and stabilization at -4 °CBright straw yellow colorfine and persistent perlage, aromas of apricot, Golden apple, and white flowers. On the palate it is creamy, mineral, and velvety. Excellent with dry pastries, shellfish, and mollusks, served at 6–8 °C.
