'Farfalla' Extra Brut Rosé celebrates the intensity and particular elegance of Pinot Noir vinified in rosé in the Ballabio style. It is made from Pinot Noir grapes, sourced from owned vineyards with a predominantly calcareous-clay structure nestled on hillside slopes from vines with an average age of 20 years. The Cuvée is assembled using, along with the wines of the vintage, a good 20% of reserve wines. It is aged in the bottle for at least 30 months. Disgorgement and an additional 2 months of evolution before being released for sale. The bouquet features aromas of small red fruits, citrus, and fragrant, delicately toasted notes. Full-bodied, fresh, and satisfying on the palate, it reaches the heights of elegance thanks to the creaminess of the effervescence.

THE COMPANY
When talking about Oltrepò Pavese, a land of notable sparkling wine tradition, it is impossible not to mention the winery Ballabio, founded over a century ago, exactly in 1905, by Angelo Ballabio, a name today synonymous with great quality winemaking. With 100,000 bottles produced each year, the company in Casteggio currently belongs to Filippo Nevelli and his son Mattia, who, after equipping the winery with the latest technologies, have decisively embarked on the path of sparkling wine production, aiming to transform the Ballabio brand into an undisputed reference point for sparkling wine production in the Pavese region. The vineyard area of the company spans about fifty hectares, with a rich and varied subsoil, due to the changes of different geological eras, which have contributed to its current shape. The only grape variety cultivated is Pinot Noir, a grape typically used in the production of high-class Classic Method sparkling wines. A challenging grape, Pinot Noir expresses itself best in these lands rich in calcareous sediments. The only labels produced by the Ballabio winery are therefore sparkling wines, which enjoy elegance and structure, olfactory breadth, and tasting clarity; celebrated and loved by connoisseurs. “Farfalla” is the crown jewel of the winery, an excellent expression of the best of the Oltrepò territory, both in the classic Extra Brut version and in the refined Zero Dosage.
