Made exclusively from Pinot Noir grapes from historic 30-year-old vineyards over 400 m a.s.l., it ages at least 8 years on the lees and another 6 months in bottle, disgorged without liqueur d’expedition. The result is a sharp and elegant profile with rich aromas, fine perlage, and a fresh, lingering finish. THE COMPANY
When talking about Oltrepò Pavese, a land of notable sparkling wine tradition, it is impossible not to mention the winery Ballabio, founded over a century ago, precisely in 1905, by Angelo Ballabio, a name today synonymous with great quality winemaking. With 100,000 bottles produced annually, the Casteggio business currently belongs to Filippo Nevelli and his son Mattia, who, after equipping the winery with the most modern technologies, have decisively embarked on the path of sparkling wine production, in order to transform the Ballabio company into an undisputed reference point for sparkling wine production in the Pavese region. The vineyard area of the company extends for about fifty hectares, with a rich and varied subsoil, due to the changes of different geological eras, which have contributed to its current conformation. The only grape variety cultivated is Pinot Noir, a grape typically used in the production of high-class Classic Method sparkling wines. A challenging grape, Pinot Noir expresses itself best in these lands rich in calcareous sediments. The only labels produced by the Ballabio company are therefore those that are sparkling, which enjoy elegance and structure, olfactory breadth, and taste clarity; celebrated and loved by connoisseurs. “Farfalla” is the jewel of the winery, an excellent expression of the best of the Oltrepò territory, both in the classic Extra Brut version and in the refined Zero Dosage.
