An elegant and enveloping red, Palazzo della Torre 2022 by Allegrini is born from the union of traditional grapes from the Valpolicella and a partial appassimento that provides structure and smoothness. The winemaking process involves fermenting a portion of the fresh grapes to which the share of dried grapes is subsequently added, a technique that imparts aromatic complexity and notes of ripe fruit, spices, and cocoa. The aging takes place in barriques for at least 15 months, followed by two months in bulk and a further 7 months in the bottle before commercialization, to achieve greater harmony and elegance. On the palate, it is velvety, with soft tannins and a long finish. Ideal with red meats, roasts, game, and aged cheeses, it complements both rich dishes and simpler preparations of traditional cuisine with balance.
