The 'St. Daniel' Riserva from Colterenzio is made using the historic vineyards on the hills between Ora and Montagna and is a perfect example of the great red wines of South Tyrol. The pure Pinot Noir grapes undergo a short maceration at cool temperatures followed by fermentation for 14 days. The wine is aged for 2/3 in large wooden barrels and 1/3 in barriques for 12 months. This is followed by a year of maturation in the bottle. It stands out for its refined elegance, expressing notes of ripe red berries and a fine, delicate tannic structure. Balanced and of great harmony, with a medium and balanced body, and an elegant and persistent finish. Excellent with light appetizers, veal and poultry dishes, but also with robust fish dishes.
