The Pommard from Domaine Michel & Marc Rossignol is a red wine produced in the Côte de Beaune, in the municipality of Volnay, Burgundy, from 60-year-old vineyards. It is cultivated without the use of chemical herbicides and is harvested by hand. The wine is aged in oak barrels for 18 months. Pommard, renowned for being a powerful and tannic wine, is also a wine rich in sensitivity. It has a fine nose that develops aromas of blackberries, blueberries, and red currants, followed by notes of leather and spices. On the palate, the attack is clear and offers a generous structure. When young, it is a rather closed wine, which is why it is recommended to let it age for at least 5 years before tasting. With aging, Pommard develops in a wilder way and shifts towards notes of chocolate and pepper. 1,500 bt/year produced.
