The Franciacorta Vintage Collection Extra Brut 2020 by Ca’ del Bosco is a bold blend of 68% Chardonnay, 29% Pinot Noir, and 3% Pinot Blanc, hand-harvested from over 30-year-old vines. Each bunch is immersed in the famous “berry spa” – three soaking vats and a drying tunnel – before oxygen-free pressing. The musts rest 5 months in fine oak barrels and refine for 48 months on the lees, achieving a unique balance of elegance and complexity. The oxygen-free disgorgement, Ca’ del Bosco’s exclusive patent, preserves integrity and longevity, while the extra brut dosage of 1.5 g/Lenhances freshness and verticality. In the glass it shows very fine perlage, aromas of ripe fruit, citrus, and toasted notes. Perfect with gratinated shellfish, seafood sushi, fresh goat cheeses, and creamy risottos. Each bottle is numbered and traceable, a true guarantee of uniqueness.
