Champagne AOC Extra Brut Blanc de Blancs “Sophos” by Waris Hubert is an authentic expression of the Grand Cru of Avize, in the heart of the Côte des Blancs, where chalky soils give minerality and tension to 100% Chardonnay. Grapes come from the historic parcel “Les Maladries”, with vines around 90 years old, providing unique depth and complexity. Vinification in oak barrels, with partial malolactic fermentation, and over 5 years aging on the lees add structure, creaminess, and aromas of ripe citrus, white fruit, flowers, and chalky notes. With a low dosage of 4 g/L, it preserves elegance and freshness, perfect with shellfish, oysters, noble fish, and gourmet dishes.

Waris Hubert

The Waris Hubert Maison was founded in Avize, in the heart of the Côte des Blancs, where deep chalk soils and terroir vocation give life to refined Chardonnay. Established in 1999 by Olivier Waris and Caroline Hubert, the estate combines family tradition with a modern vision, creating a style that highlights purityaromatic precision, and mineral elegance. The vineyards include Grand Cru and Premier Cru parcels in Avize, Chouilly, Oger, Cramant, and Ay, among the most prestigious areas for producing high-quality Champagne.

The production philosophy is clear: respect for nature, enhancing each parcel, and vinifications aimed at expressing the nuances of every cru. Fermentation takes place partly in stainless steel and partly in oak, with lees aging always exceeding 24 months, giving complexity and depth. Color: In English the wine shows a bright straw yellow with greenish highlights, a fine and persistent bead enhancing the purity of Chardonnay.
