Burgundy: Chablis

Located in the far north of Burgundy, the Chablis designation is a unique territory in terms of identity and prestige. The vineyards surround the town of the same name, in the Yonne department, and develop on Kimmeridgian limestone soils, rich in marine fossils, which give the wines an unmistakable and sought-after minerality.

Here, Chardonnay predominates, interpreted in a pure and crystalline version: dry, fresh, and vibrant wines with aromas of citrus, white flowers, and the typical chalky note that makes Chablis recognizable worldwide.

The classification is divided into four distinctive levels:

  • Petit Chablis: fragrant and immediate wines, from more recent soils and higher altitudes.

  • Chablis: the core of the designation, an authentic expression of the terroir and its balance.

  • Chablis Premier cru: over 40 climats that offer greater structure, complexity, and elegance, with excellent aging potential.

  • Chablis Grand cru: 7 historic climats, located on a single hill north of Chablis, capable of producing wines of extraordinary depth and longevity.

The classic style favors vinification in steel, with measured use of wood, to preserve freshness and aromatic precision. The best Chablis evolve magnificently over time, transforming their youthful energy into harmonious elegance.
