The Chablis 1er Cru 'Mont de Milieu Vieilles Vignes' from Châteaux de Fleys is a pure Chardonnay that comes from 85-year-old vineyards located on the left bank of the Serein river, a great area dedicated to the production of this grape. Vinification and fermentation occur 20% in French oak barrels and 80% in stainless steel. It ages for 16 months on the lees in stainless steel. The bouquet is complex and elegant, with fruity notes of peach, apple, and apricot; citrus and floral notes of white flowers; on the finish, there are hints of almond and a light spiciness. On the palate, it is intense and refined, while the finish presents mineral notes and light spicy hints. Balanced and persistent, with excellent savoriness and freshness. Only 3,850 bottles produced per year.

THE COMPANY

The history of the Château de Fleys winery begins in the late 19th century when Julien Philippon purchased some vines for wine production, land, and timber with which he built the estate that has since been passed down from father to son. At that time, the winery's headquarters was a hunting lodge belonging to the Lord of Pathenay (squire of Louis XIV).
In 1988, the Château de Fleys and its 1-hectare "Clos" were purchased by André Philippon, the grandson of Julien Philippon. Today, the Domaine is managed by the Philippon family.
The estate is located in the town of Fleys, in the heart of the Chablis production area, 4.5 km east of the town of the same name, on the right bank of the Serein River. Today, the estate covers a total of 20 hectares and is owned by the latest generation of the Philippon family, consisting of Beatrice, Benoit, and Olivier.
A terroir of extreme importance, in 6 different parcels expresses the character and identity of Chablis wines, including 3 parcels classified as 1er Cru. Careful work in the vineyard, an excellent terroir for the individual parcels, and different vinification methods to maintain and highlight the elegance and typical characteristics of the area, offer products of considerable interest.
Work in the vineyard and vinification are carried out with respect for nature. The cellar was reconstructed and renovated in 2006, with significant investments in equipment and technology aimed at maximizing the quality of the wines.
