The Pinotage, a cross between Pinot Noir and Cinsaut, is harvested early in the morning, destemmed, and gently pressed, with just two hours of skin contact that gives it its characteristic pale color. Fermentation occurs 60% in stainless steel and 40% in third-passage French barrels, combining freshness and elegance. The wine matures for about 6 months on the lees, developing complexity and structure. On the nose, it releases raspberry, strawberry, and pomegranate, enriched with hints of coconut, caramel, and exotic spices. On the palate, it is fresh, creamy, and persistent. Limited production to only 2,500 bottles, ideal with shellfish, sushi, and spicy Asian dishes.

THE COMPANY

Aaldering Vineyards & Wines, founded in 2004 by the Dutch couple Marianne and Fons Aaldering, is located in Stellenbosch, one of the premium wine-producing areas, in the Cape Winelands district, Western Cape province, nestled in the peace and tranquility of the surrounding vineyards and only 45 km from Cape Town. The terroir is that of Devon Valley, particularly the areas of Hutton (characterized by granite-rich soil, with a reddish-brown color due to the presence of iron oxide hydrate) and Clovelly (similar soil to Hutton but more clayey). This area is well known for the quality of red wines produced from grape varieties: Pinotage, Shiraz, Cabernet Sauvignon, and Merlot, the same cultivated by the winery. The wines are produced with great care and passion, with the assistance of a reliable and devoted staff. Elements of both organic and biodynamic farming are used, favoring organic products and striving to minimize chemical ones as much as possible, making the most of what nature has to offer.
