The 'Bolignano' by Cantina Castellani is a Conero Riserva, made from pure Montepulciano grapes, an intense and complex red wine. In the vineyard, minimal doses of copper and sulfur are used, along with biodynamic treatment of the soil. The manual harvest is carried out by selecting the best clusters, after the second decade of October. It is followed by fermentation with maceration on the skins for 8-10 days and aging in French oak tonneaux and finally in the bottle. The aroma is intense with scents of ripe red fruit, jams, spicy notes with hints of vanilla. On the palate, it offers pleasant sensations of ripe fruit and cherries in alcohol. Spicy, it expresses great structure, dry, warm, soft, fine, with velvety tannins and excellent persistence. Perfect when paired with first courses of Marche cuisine, roasts, grilled red meats, game, and aged cheeses.

THE VINEYARD
The vineyard is located in a hilly area with an excellent slope and an ideal south-facing exposure, on a medium-textured, predominantly clayey soil, ideal for the cultivation of the Montepulciano grape variety. We maintain the soil covered with grass without using herbicides, fertilization with manure, or green manure. For treatments, we essentially use copper and sulfur, with dosages kept to a minimum.
THE COMPANY
The Cantina Castellani, although small in size, has been designed and built according to the architectural and technological standards of large modern wineries. At the back and upper part, we have the area for receiving the grapes, where the grapes go directly from the destemmer-crusher to the fermentation tanks located at the lower level by gravity. From this processing area, after fermentation in modern temperature-controlled stainless steel tanks, the wines move to the aging cellar for maturation in small and medium-sized barrels of selected French oak.
