Grappa of great finesse obtained from fresh pomace of Prosecco from the restricted Cartizze area, an exceptional cru of Valdobbiadene, where moraine and calcareous soils, steep slopes, and constant ventilation promote full aromatic ripening. Distilled with a discontinuous vacuum still, it preserves the varietal aromas of Glera. It appears clear and bright, with floral and fruity notes reminiscent of pear, apple, and acacia blossom. On the palate it is silky and complex, combining finesse and full body with a long finish of almond and honey. The slow, artisanal distillation enhances the identity of the Cartizze terroir, creating an elegant and persistent grappa, best enjoyed at 9–12 °C in a tulip glass, paired with aged cheeses or dark chocolate.
