The Champagne Brut Nature “Les Hautes Chèvres” by Georges Laval is a refined Pinot Meunier in purity, obtained from old organically cultivated vines in the terroir of Cumariot, in the Marne Valley. Produced only in the best vintages, it comes from a rigorous manual selection of the grapes. The alcoholic fermentation takes place in foudres, followed by a maturation of 10 months in oak barrels, a long aging on the lees for 48 months, and an additional resting period in the bottle for 3-6 months.
As a Brut Nature, it involves no addition of liqueur de dosage, allowing the minerality, tension, and depth of the terroir to express themselves in purity. The result is a Blanc de Noirs of extraordinary expressiveness, intense and vibrant, capable of combining structure and finesse, ideal for important tasting moments or paired with exquisite dishes of fish, shellfish, or aged cheeses.

THE MAISON

Rècoltant-manipulant from Cumières, a small village northwest of Epernay, in the Vallée de la Marne, the maison Georges Laval has consistently pursued a philosophy of completely organic farming since 1971, which today earns it the ECOCERT certification. The management of the company is carried out by Vincent Laval, who works as a vigneron, continuing his father's legacy but personally interpreting each vintage, preserving the nature and environment surrounding the vineyards, limiting human intervention in the Champagne production process.
The vineyards today extend over a total of about 2.5 hectares – of which about one hectare belongs to the "Les Hautes Chèvres" plot, a vineyard dating back to 1930 and one of the oldest in the entire terroir of Cumières – and are planted with the classic grapes of the AOC, namely Chardonnay, Pinot Noir, and Pinot Meunier. All vineyards are south-facing and classified as Premier Cru; about half of them are over 30 years old. Obviously, organic farming practices are followed between the rows, but not only: to prevent pesticides used by hypothetical neighbors from contaminating the vines, the Georges Laval winery also treats about thirty acres of land not owned by it with its own products, ensuring a continuity of organic extension.
Vincent Laval produces about 9,000 bottles a year, pure and complex Champagne, characterized by a beautiful mineral length, which authentically and clearly reflect the profile of their terroir of origin.
