Grechetto
Grechetto is an Italian indigenous white grape variety, a wine that authentically narrates the tradition and character of the Umbrian lands. This variety has its roots deep in the winemaking history of central Italy, with origins believed to date back to ancient Greece, from which the name itself is derived. It is a wine that stands out for its versatility and its ability to adapt to the peculiarities of different terroirs, thus expressing a unique personality.
Grechetto is primarily cultivated in Umbria, a region that enhances its qualities thanks to a favorable climate and fertile soils. However, its presence also extends to some areas of Lazio and Tuscany, where it contributes to the creation of wines with great character. Among the most prestigious denominations that highlight this grape variety is the famous Orvieto DOC, where Grechetto often plays a leading role, providing structure and complexity to the wine.
Grechetto grapes give life to a wine with a fascinating organoleptic profile. In the glass, it appears straw yellow with golden reflections, a prelude to an intense and varied aromatic bouquet. The aromas range from floral, like acacia and hawthorn, to fruity notes of apple, pear, and peach, with a hint of almond on the finish. On the palate, Grechetto is distinguished by its freshness and liveliness, accompanied by good structure and persistence. It is a wine that manages to perfectly balance acidity and softness, making it extremely pleasant and versatile in gastronomic pairings.
The production of Grechetto does not involve particular avant-garde techniques but relies on traditional methods that respect its integrity and authenticity. Harvesting is generally done by hand to select only the best bunches, which are then subjected to gentle pressing. Fermentation occurs at a controlled temperature to best preserve the varietal aromas. Some versions of Grechetto can be aged in steel to enhance freshness and fragrance, while others, more complex, undergo a brief passage in wood that enriches the aromatic bouquet and gives the wine more body.
Grechetto lends itself to multiple culinary pairings, thanks to its versatility and balanced character. It pairs perfectly with fish-based dishes, such as tuna or salmon tartare, shellfish, and mollusks. It is also excellent with light first courses, like vegetable risottos or pasta with white sauces. Its fresh and aromatic character makes it ideal for accompanying soft cheeses and white meats.
