Spumante Metodo Classico Riserva 'D’Antan' Millesimato 2013 by La Scolca is an author cuvée, made from only hand-selected Cortese grapes from the most suitable historic vineyards of Gavi. The vinification according to the Metodo Classico involves a long aging of over 120 months on the lees, followed by disgorging without dosage to express the maximum purity of the grape variety. On the nose, aromas of toasted hazelnut, citrus peel, acacia honey, and flint emerge, while the palate is vibrant, dry, and deeply mineral, with a very fine bubble and a persistent finish. Perfect when paired with oysters, raw seafood, caviar, author sushi, but also with aged cheeses and truffle dishes, to enhance its intensity and complexity. THE COMPANY

The estate La Scolca was purchased between 1917 and 1919 by the great-grandfather of the current owner Giorgio Soldati, who now runs the company together with his daughter Chiara Soldati.
The name of the plot derives from the ancient toponym Sfurca, meaning "Look far away," and the farmhouse that stood there was previously a lookout post; the surname fully reflects the proud and tenacious character of the owners and their wines.
At the time of purchase, the property was partly covered by woods and partly cultivated with wheat. It was a well-thought-out intuition to plant Cortese vineyards in 1900 in a territory exclusively suited for the cultivation of red grape vineyards: never has the name of the Company proved prophetic. The production soon became a primary technical and entrepreneurial activity.
