'Emotions' by Cantina Castellani is a Quality Rosé Sparkling Wine, made from 100% Montepulciano grapes, with a full and dynamic taste. In the vineyard, minimal doses of copper and sulfur are used along with biodynamic treatment of the soil. The harvest takes place at the end of August. Fermentation of only the free-run juice in cryomaceration for about 18-20 days, maturation in steel for 4 months for the base wine, followed by bottling and resting on the lees for 24 months. This results in a sparkling wine with a bright light pink color and captivating perlage. Notes of violet, lilac, and wild rose, fragrances that evoke sensations of green almond and orange, strawberry, and raspberry. On tasting, it impresses with its full and dynamic flavor, balanced, with a round and slightly bitter finish. Perfect for Happy Hour, fish dishes or white meats, excellent with fried fish.

THE VINEYARD
The vineyard is located in a hilly area with an excellent slope and an ideal south-facing exposure, on a medium-textured, predominantly clayey soil, ideal for the cultivation of the Montepulciano grape variety. We maintain the soil covered with grass without using herbicides, fertilization with manure, or green manure. For treatments, we essentially use copper and sulfur, with dosages kept to a minimum.
THE COMPANY
The Cantina Castellani, although small in size, has been designed and built according to the architectural and technological standards of large modern wineries. At the back and upper part, we have the area for receiving the grapes, where the grapes go directly from the destemmer-crusher to the fermentation tanks located at the lower level by gravity. From this processing area, after fermentation in modern temperature-controlled stainless steel tanks, the wines move to the aging cellar for maturation in small and medium-sized barrels of selected French oak.
