Trento DOC Dosaggio Zero "Perlé Zero" 2017 Ferrari is a Trentodoc that takes the expressive purity of mountain Chardonnay to the extreme, thanks to a blend of different vintages, with no added sugar. The grapes, hand-picked from the best high-altitude vineyards, are vinified in steel – to enhance the fruit – and partly in wood, which adds structure and complexity. The long aging in glass, over 6 years on the lees, provides depth and extraordinary finesse. On the nose, it is explosive in freshness, with notes of lemon balm, aromatic herbs, lemon cream, and gypsum, which open up to pineapple and anise with oxygenation. The sip is enveloping at first, then reveals itself to be tense, dry, and salty, with hints of citrus zest and Himalayan salt.
