It rests for 16 months in French barriques and then continues its evolution for another 16 months in 50 hl barrels under the strict supervision of Domenico Clerico. A journey that will see its conclusion only after further aging in bottle for two years.

THE WINE
The Barolo 'Pajana' by Domenico Clerico is born in a clayey soil, with vines planted in '71 and '91, the grape varieties have an ideal exposure and the production of this wine reaches about 5000 bottles. It rests for 16 months in French barriques and then continues its evolution for another 16 months in 50 hl barrels under the strict supervision of Domenico Clerico. A process that will only conclude after an additional two-year aging in the bottle.
THE COMPANY
Around the mid-1970s, in 1976 to be precise, Domenico Clerico, at his father's request, chose to take over the family farm, which at the time covered an area of about five hectares and produced grapes to be sold to the nearby social winery. However, seeing the meager profits and being convinced of the enormous potential of the lands of Langhe, Domenico, assisted by his wife Giuliana in managing the estate, decided to start vinifying his own grapes to produce quality wines.
With love and dedication, he began to care for his vines, trying to interpret every little need at every moment of the year. Meanwhile, Domenico purchased new well-positioned plots, in the heart of Bussia, in the cru Ginestra and in the cru Mosconi, choosing lands characterized by optimal microclimatic conditions.
Today, the winery of Domenico Clerico has 21 hectares of vineyards, located in some of the best sub-zones of the Barolo of Monforte d’Alba and Serralunga d’Alba. At an altitude ranging from 150 to 450 meters above sea level, managing its rows carefully and prudently, with the utmost respect for the environment, nature, biodiversity, and the ecosystem, it produces pure and valuable grapes, which translate into labels with a thousand facets, olfactively seductive and tastefully complex.
Thus, hard work, sweat, and determination have given rise to what can currently be considered a vital and dynamic wine-growing reality, undoubtedly one of the most representative wineries of Monforte d’Alba. The company of Domenico Clerico best interprets especially the nebbiolo grape, producing wines that are overwhelming in olfactory notes, noble on the palate, and endless in persistence. From the Barolo “Pajana” to the Barolo “Aeroplanservaj”, from the Barolo “Ciabot Mentin” to the Barolo “Percristina”, not to mention the Barbera and Dolcetto: simply extraordinary wines.
