Barolo 'Pajara' by Domenico Clerico is made in a clay soil, with vines planted in '71 and '91, the vines have an ideal exposure and the production of this wine reaches 5000 badly counted bottles. It rests for 16 months in French barriques and then continues its evolution for another 16 months in 50 hl barrels under the strict supervision of Domenico Clerico. A path that will end only after further refinement in the bottle for two years.

Around the mid-70s of the last century, in 1976 to be exact, Domenico Clerico, at the request of his father, chose to take over the reins of the family farm, which at the time extended over an area of about five hectares and produced grapes to be delivered to the nearby winery. However, given the small earnings and at the same time convinced of the enormous potential of the lands of the Langhe, Domenico, assisted by his wife Giuliana in managing the estate, decided to start vinifying their grapes to produce quality wines.
With love and dedication he therefore began to take care of his vines, trying to interpret every minimum need at any time of the year. At the same time, Domenico purchased new well-located plots of vines, in the heart of Bussia, in the Ginestra cru and in the Mosconi cru, choosing soils characterized by optimal microclimatic characteristics.
Today Domenico Clerico's cellar has 21 hectares of vineyards, located in some of the best sub-areas of Barolo di Monforte d’Alba and Serralunga d’Alba. At an altitude that varies between 150 and 450 meters above sea level, direct and careful management of the rows, with the utmost respect for the environment, nature, biodiversity and the ecosystem, genuine and precious grapes are harvested , which translate into labels with a thousand facets, olfactively seductive and tastefully complex.
This is how fatigue, sweat and stubbornness gave life to what can currently be considered a vital and dynamic winemaking reality, to be undoubtedly included among the most representative wineries of Monforte d'Alba. Company, that of Domenico Clerico, which best interprets above all the Nebbiolo grape variety, obtaining overwhelming wines in the olfactory scents, noble on the palate and infinite in persistence. From Barolo "Pajana" to Barolo "Aeroplanservaj", from Barolo "Ciabot Mentin" to Barolo "Percristina", without of course forgetting Barbera and Dolcetto: simply extraordinary wines.
