The Barolo 'Ciabot Mentin' by Domenico Clerico is an expression of great finesse and high class. It is produced from the eponymous vineyard, located within the Cru Ginestra. Long maceration and fermentation of the must for about 30 days and aging first for 16 months in barriques and then another 16 months in 50 hl barrels. The process concludes with a bottle maturation of about 2 years. The aroma is marked by red fruit, which presents itself in a crunchy, wild, and spirit-soaked form. This is followed by notes of licorice with hints of toasted and spiced notes. The taste is intense, engaging, and of great structure, with noble class. A wine with an almost unlimited lifespan.
