THE GRAPPA
The Grappa 'Sassicaia' Tenuta San Guido by Jacopo Poli was created with the idea of enhancing the grapes that give life to one of the most renowned and awarded red wines internationally, producing a grappa that can carry, even in the world of distillates, the extraordinary quality of Sassicaia wine. The result is a bottle that encapsulates the precious aromatic notes of Cabernet Sauvignon and Cabernet Franc grapes, extending their existence, a synthesis of the excellence of a terroir and an ancient artisanal craftsmanship. The distillation takes place according to the strictest protocols that allow for the absolute extraction of the best fragrances and aromas, capable of conveying, in the form of distillate, the same allure as the wine. It ages for 4 years in barriques and rests for 6 months in barrels previously used for aging Sassicaia. A distillate dedicated to connoisseurs and collectors.
THE DISTILLERY

The Poli distillery is located in Schiavon, a small village that hosts a unique Grappa museum, thanks to the Poli. Venetians by certification since the 15th century, the Poli generations have always dedicated themselves to highly artisanal work: shepherds, hatmakers, innkeepers, and finally distillers. In 1898, they transitioned from home production to a more structured one: the distillery is now one of the most known and appreciated, a symbol of the Italian tradition of white grappa.
Poli firmly follows tradition but is a modern distillery due to the freshness and especially the speed with which it processes the pomace coming from the Dolomites to Venice. The artisanal touch emerges when looking at the production techniques: the grapes of Gewürztraminer, Merlot, and Moscato are distilled with steam stills, traditional bain-marie, and under vacuum, depending on the style and label of the produced distillate. In the Poli grappas, the soul of a terroir and a culture of excellence that is wholly Italian is encapsulated.
