The Chianti Classico DOCG Ama from Castello di Ama is made from Sangiovese and Merlot hand-harvested in young vines (10–12 years) rooted in calcareous–clayey soils that impart finesse and energy. Vinification, carried out separately by variety, takes place with indigenous yeasts in steel at 30–32 °C, with manual pump-overs and a 25-day cuvaison, followed by natural malolactic fermentation. After blending, the wine ages for 12 months in fine-grained oak barriqueswith no new wood, preserving purity and typicity. In the glass it shows deep ruby color, aromas of ripe cherry, spices, and tobacco, with soft tannins and a long, balanced finish. Perfect with bistecca alla fiorentina, pappardelle with wild boar ragù, roasted meats, and aged cheeses, it fully expresses the harmony and authenticity of Chianti Classico.
