The Grappa di Barolo 20 Years by Marolo - Distilleria Santa Teresa comes from a long journey that began in the 1970s, when Paolo Marolo started producing artisanal distillates using small steam boilers. The production process relies on an absolutely high-quality raw material, made from fresh and fragrant pomace of Nebbiolo grapes, sourced from vinifications of Barolo carried out by local wineries. It is a distillate of good smoothness and moderate sweetness, aged for 20 years in small oak and acacia casks. Exceptionally spicy aromas, with clear notes of pepper, cloves, nutmeg, tobacco, anise, and licorice. Fruity scents of jam, candied fruit, baked apple, dried plum, raisins, almond, and walnut. Alcohol content 50°. Excellent.

The production process relies on absolute quality raw materials, consisting of fresh, fragrant pomace from Nebbiolo grapes, sourced from the winemaking of Barolo carried out by local wineries. It is a distillate of good smoothness and moderate sweetness, aged for 20 years in small oak and acacia barrels. THE DISTILLERY

The history of the prestigious distillery of the Marolo brothers is an example of innovation, tenacity, and great insights. It all began in the 1970s when Paolo Marolo, a young professor at the Enological School, became enthusiastic while attending a course on herbalism and liqueurs; this is the origin of a dream that led him to associate his name with high-quality Piedmontese grappa.
In 1977, Paolo Marolo founded, together with his brother, a small distillery in the family home in Mussotto d’Alba, named after a fresco depicting Saint Teresa of Avila. In a context dominated by large industrial distilleries, Paolo restored the traditional small steam boiler system, which is more expensive and slower than industrial continuous de-alcoholizers, but capable of ensuring smoothness and complexity in the distillate. The first experiments with Moscato pomace yielded results that went well beyond expectations. Strong from these initial successes, Paolo then specialized in the distillation of Nebbiolo pomace, introducing, after long experiments, acacia wood for aging.
Today, the Distilleria Santa Teresa of the Marolo brothers is led by Paolo and his son Lorenzo, who are able to combine ancient artisanal techniques with the most modern equipment to continue pursuing the original goal: to transform the traditional product of Piedmontese grappa into a product of great excellence. The grappas from Marolo, whether white or aged, produced from pomace coming from the pressing of the main and most characteristic wines of Piedmont, such as Barolo, Barbera, Moscato, and Arneis, are now positioned at the top of grappa production throughout northern Italy.
