Pigato
Pigato is a white wine that embodies the essence of Liguria, a region known for its breathtaking landscape and deep-rooted winemaking tradition. This wine has its roots in the winemaking history of the Riviera di Ponente, an area where the sea meets the hills, creating a unique microclimate that favorably influences viticulture. The name "Pigato" derives from the dialect term "picà," which means spotted or dotted, referring to the small spots that appear on the grapes when they are ripe.
Pigato is mainly produced in the province of Imperia, where vineyards cling to the terraced hills overlooking the Ligurian Sea. Here, the vines benefit from a mild climate, with marine influences that give the wine an unmistakable freshness and flavor. The grapes used for Pigato are exclusively from the Pigato variety, an indigenous grape that stands out for its ability to authentically and vibrantly express the Ligurian terroir.
The production of Pigato follows traditional methods, with winemaking that enhances the peculiar characteristics of the grape and the territory. After manual harvesting, the grapes are gently pressed, and the resulting must is fermented at a controlled temperature to preserve the delicate varietal aromas. The wine is then aged in steel or in the bottle to keep its freshness intact.
From an organoleptic point of view, Pigato presents a straw yellow color with golden reflections, foreshadowing an intriguing and complex aromatic bouquet.
