Picolit
Picolit is an extraordinary dessert wine, a true symbol of the winemaking craftsmanship of Friuli Venezia Giulia. This precious nectar has its roots deep in a region dedicated to viticulture, where the Friulian hills touch the sky and the sun gives the grapes a unique and enveloping warmth. The history of Picolit is fascinating and mysterious, a tale of resilience and dedication that unfolds among the vineyards and cellars of this generous land.
Produced from the grape variety of the same name, Picolit is known for its extremely low yield. The cultivation of these vines requires meticulous care, as the plant is characterized by an irregular flowering, often resulting in sparse clusters and small berries. However, it is precisely this peculiarity that gives the wine its unmistakable aromatic profile and extraordinary complexity.
In the production of Picolit, the grapes are harvested by hand, selecting only the best clusters. Subsequently, a natural drying process is carried out, during which the berries are left to rest to concentrate sugars and aromas, a process that can last several weeks. Fermentation takes place in small wooden barrels, where the wine acquires structure and finesse, developing an aromatic bouquet that captivates the senses.
Picolit presents itself with a bright golden color, reminiscent of the sun's rays at sunset. On the nose, it offers a rare complexity of aromas: notes of honey, acacia flowers, dried apricot, and almond intertwine harmoniously, while slight hints of sweet spices and vanilla enrich the bouquet. On the palate, Picolit enchants with its sweetness balanced by a lively acidity, which enhances its elegance and persistence. The silky structure and long finish leave a sensation of satisfying softness, making each sip a unique sensory experience.
This dessert wine suits various occasions: it can be enjoyed on its own, as a meditation wine, or paired with blue cheeses, foie gras, and refined desserts based on dried fruits or chocolate. Picolit is a wine to discover and rediscover, a small treasure that tells the passion of the Friulian winemakers and the beauty of a region unique in the world.
