'Unique Opera' by Donnafugata is a small premium production of only 6,574 bottles. Pure Chardonnay resulting from unusual climatic conditions. In 2018, the rainfall made harvesting impossible; the unique temperature and humidity conditions then favored the appearance of noble rot on the grapes. The grapes were vinified separately to create something special. Aging took place for 9 months in tank and over 4 years in bottle. Surprising organoleptic profile: extraordinarily broad bouquet of ripe yellow-fleshed fruit, candied citrus, saffron, ginger, chestnut honey, and beeswax; pronounced acidity and savory finish. This wine pairs well with sushi, semi-aged cheeses, mushroom-based dishes, and white meats.
