Grappa di Barolo 9 Years by Marolo - Distilleria Santa Teresa, made from a long journey that began in the 1970s, the era in which Paolo Marolo began producing artisanal distillates with small steam boilers. The production process can count on a raw material of absolute quality, consisting of fresh and fragrant Nebbiolo grape pomace, coming from Barolo vinifications carried out by local wineries. At the end of the passage in the still, a fragrant, delicate and elegant distillate is obtained, which is matured for a period of 9 years in small oak and acacia barrels. The combination of two different essences allows you to obtain an extraordinary aromatic complexity and the pleasant slightly honeyed notes typical of acacia. Alcohol content 50°.

The history of the Marolo brothers' prestigious distillery is an example of innovation, tenacity and great intuitions. It all began in the Seventies, when Paolo Marolo, a young professor at the Oenology School, became enthusiastic by taking part in a course on herbal medicine and liqueur making; this is the origin of a dream, which led him to link his name to that of quality Piedmontese grappa.

In 1977 Paolo Marolo founded, together with his brother, a small distillery in the family home in Mussotto d'Alba, which took its name from a fresco depicting Saint Teresa of Avila. In a context dominated by large industrial distilleries, Paolo restored the traditional steam boiler system, more expensive and slower than continuous industrial de-alcoholizers, but capable of guaranteeing smoothness and complexity to the distillate. The first experiments with Moscato pomace gave results that went far beyond expectations. Strengthened by the first results achieved, Paolo then specialized in the distillation of Nebbiolo pomace, introducing, after long experiments, acacia wood for ageing.

Today the Santa Teresa Distillery of the Marolo brothers is led by Paolo and his son Lorenzo, capable of combining ancient artisan techniques with the most modern equipment to continue pursuing the original objective: transforming the traditional product of Piedmontese grappa into a product of great excellence. The grappas of Marolo, white or aged, produced from the pomace coming from the racking of the major and most characteristic wines of Piedmont, such as Barolo, Barbera, Moscato and Arneis, today rank at the top of grappa production throughout the Northern Italy.

Bouquet: aromatic complex is extraordinarily broad and articulated, fruity range of exceptional variety and completeness, from dried fruit to cooked and canned fruit up to dried plums and raisins.

Taste: very soft, floral, notes of honey, spicy, dominated by the hint of wood from the barrique which gives the distillate aromas of cinnamon, tobacco and liquorice, with a vanilla base.
