ASPARAGUS ARE SO GOOD, BUT HOW DO I PAIRE THEM?

The vegetable sensation typical of asparagus makes it difficult to pair with wine. If the asparagus is in an omelette or in a risotto, the ideal pairing is with a sparkling wine, a Franciacorta or a Prosecco. If, on the other hand, they are the main protagonists of the recipe, a Tuscan Sangiovese or a Chianti, reds with a calm character and little tannin, is preferable. Always valid when paired with fresh and vegetable whites such as Sauvignon blanc, Pinot Bianco or Grigio or Soave or Lugana.
