With spring comes the broad beans, legumes that in the spring months can be eaten raw or cooked without soaking. Low in fat and calories, they are also the ideal food for low-calorie diets.

Broad beans, with a light flavor, are typically served in combination with tasty cheese such as pecorino, or in omelettes. Also excellent in risotto with cuttlefish or in the traditional bean and chicory puree. For the wine you can opt for a Lazio white or a pinot bianco with citrus nuances.
